Supreme Pizza Skillet Lasagna

You read that right.



Pizza and lasagna, match made in heaven.

We love love love supreme pizza in this house.  It's always a front-runner when we're in the mood for a pizza night (we usually opt for pepperoni pineapple when dining out. do it).  I dreamed up this idea one day (either at the bakery or in the shower- my two key places where inspiration tends to strike) while I was thinking of a way to use up half an onion and a red bell pepper that had been sitting in the fridge a tad too long, and were quickly reaching the end of their prime.  As a result, my brain got to churning, and this was the end result. 

As I prepared to make this meal, I made sure to include all of the essential characteristics necessary to building a supreme pizza- I sauteed up some yellow onion and red bell pepper, tossed in a handful of crumbled italian sausage, sliced up a few fresh mushrooms and black olives, and topped it all off with pepperoni and provolone.  It literally tastes like supreme pizza was dumped in a bowl with some noodles.  And it's nothing short of amazing.

Skillet Lasagna

Serves 4

4 ounces lasagna noodles, broken into thirds (I used 4 noodles)
1/2 tablespoon olive oil
1 tablespoon unsalted butter
1/2 sweet onion, diced
1/2 red bell pepper, diced
1/4 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
1 cup pre-cooked italian sausage crumbles (I used Jimmy Dean Fully Cooked Sausage Crumbles)
1 (14-ounce) can crushed tomatoes
1 1/2 teaspoons dried basil
1 small can sliced black olives, drained
3 large mushrooms, sliced thin
14 pepperoni slices
4 large slices of provolone cheese

Preheat oven to 425 degrees.  In large pot, cook broken pasta noodles according to package directions.

Heat a large (mine was 10.25 inch) oven-safe skillet over medium heat. Add in olive oil and butter, then toss in onions and bell peppers with salt and pepper. Stir and cook for 6 minutes, until soft. Add in garlic and cook for another minute, then add in sausage crumbles, cook until warmed through.

When noodles have softened, remove with a slotted spoon or drain and set aside for a few minutes.  Once sausage is warmed, add in tomatoes and basil, tossing well to coat. Add in olives and mushrooms, gently folding mushrooms into the sauce mixture.  Cover with lid for about five minutes to allow the mushrooms to cook through.  Add in the broken noodles, using the spatula or spoon to fold the sauce over the noodles. Once noodles are evenly distributed and mostly under the sauce, top with pepperoni slices and provolone. Bake for 10 minutes or until cheese begins to bubble.

Thai Chicken Pizza

I've got the place to myself...


Yup, Nathan is out of town for a couple of days.

That means parking in the middle of the driveway and sleeping in the middle of the bed.  It means "secretly" sneaking things onto his Honey Do List and "secretly" catching up on trash tv (aka Bachelor Pad- don't hate) in the privacy of my own home.  It means maybe, just maybe, remaking a mini version of this crazy good pizza we ate last week at 10pm on a tuesday night.

Alllll for my single gal self.  Just because I can.  And because it's AMAZING. 
That deserved all caps.  

Smothered with sweet chili sauce "marinara", zucchini "pepperonis", chicken, cheese, and a sprinkling of fresh herbs I could eat this pie every night.  (p.s. it's even great as a single gal's pizza bagel, just fyi)

Whole Wheat Pizza Crust


Let's talk pizza night.  It happens about once a week in our house. 

But I'll be honest.  This pizza was born out of a 'crap, I need to use some of this stuff up in the fridge before it dies' moment.  This is how I looooooove my pizza though: chock full of goodies piled on top.  (Supreme is where it's at). 

And the crust.  That's what I'm really here to talk to you about.  This is THE crust.  This is the real deal and so easy you will never buy a prepackaged, overpriced, plastic-tasting joke of a crust again.  You can make it thick or thin, round or rectangle, one pan or two personals.  Just proof some yeast, toss in a bit of flour, beat it up (aka knead it), then let it rise while you catch up on The Bachelorette

In a couple of hours, you're ready to roll it out and top it with whatever your little heart desires (or whatever the fridge is preparing to kill).

Whole Wheat Pizza Crust

2 1/4 teaspoons active dry yeast
1/2 cup warm water
1/2 tablespoon honey
1 teaspoon olive oil
1/2 teaspoon salt
1 cup whole wheat flour
1/2 cup all-purpose flour

In the bowl of your electric mixer fitted with a dough hook, combine yeast, warm water, honey and olive oil and mix with a spoon.  Let sit for 10 minutes until foamy, then add salt and flours.  Mix on low speed until just combined, adding more water, one tablespoon at a time until dough forms a tacky, but firm ball. Knead for 5-6 minutes.

Spray or brush a seperate bowl with olive oil or cooking spray.  Add dough, turning once, then cover with a damp towel and set in a warm place to rise for 1 1/2-2 hours. 

Roll out pizza dough to desired shape and size and add toppings.  Bake at 400 degrees for 15-20 minutes.

Pepperoni Pizza Puffs


I apologize for the brief absence.  I went to visit my family for the Easter Holiday and after we came back to Texas there was a lot of catch up to do!  But here I am, back in the blogosphere.

While we were on our mini vay-cay, we got to enjoy some delicious pizza one night at a little place in Tulsa called Joe Momma's...and this nugget stood out on the menu as soon as I opened it:

Anyway, while this did sound delicious as I LOVE anything buffalo chicken style (stay tuned soon!), this wasn't one of the top contenders in ordering for our table of ten.  (We opted for Lucky 7's and The Natalie Portman in case you were curious.) 
But after arriving home and settling back into our routine, I wanted pizza and I wanted to mix things up a bit- hence Pepperoni Pizza Puffs.  These cute puffs would make a fun appetizer and have unlimited flavor options!  I'm a big supreme pizza fan so bell peppers, olives, and sausage may be in their near future!


Pepperoni Pizza Puffs

Makes 24 puffs

3/4 cup flour
3/4 tsp baking powder
1/2 tsp dried oregano
3/4 cup milk
1 egg, lightly beaten
4 oz mozzarella cheese, shredded (about 1 cup)
4 oz pepperoni, diced (about 1 cup)
1/2 cup pizza sauce (homemade or store-bought)
2 Tbsp. fresh basil, finely diced.

Preheat oven to 375 F.
Grease a 24-cup mini muffin pan. In a large bowl, whisk together the flour, baking powder and oregano; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes.

Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Warm the pizza sauce, then stir in 1 tablespoon basil. Sprinkle the puffs with the remaining 1 tablespoon basil. Serve the puffs with the pizza sauce for dipping.
